Mediterranean Stir-Fried Asparagus with Shrimp
Ingredients:

1 lb (450g) shrimp, peeled & deveined

1 bunch asparagus, trimmed & cut into 2-inch pieces

2 tbsp extra-virgin olive oil
-
3 garlic cloves, minced
-
1 small red onion, thinly sliced

1 medium red bell pepper, sliced
-
1 medium zucchini, sliced into half-moons
-
1 cup cherry tomatoes, halved
-
1 tsp paprika
-
½ tsp chili flakes (optional)

1 tsp dried oregano
-
Juice of 1 lemon
-
Salt & black pepper, to taste

2 tbsp fresh parsley, chopped
-
Optional garnish: crumbled feta or olives
Instructions:

Prepare shrimp – Pat shrimp dry, season with a pinch of salt, pepper, paprika, and half the lemon juice.

Cook shrimp – Heat 1 tbsp olive oil in a large skillet/wok over medium-high heat. Add shrimp and stir-fry for 2–3 minutes until pink and just cooked. Remove and set aside.

Stir-fry vegetables – In the same pan, add remaining olive oil. Toss in garlic and onion, sauté until fragrant. Add asparagus, zucchini, and bell pepper. Stir-fry for 3–4 minutes until crisp-tender.

Add tomatoes & seasoning – Stir in cherry tomatoes, oregano, chili flakes, salt, and pepper. Cook for 2 more minutes until tomatoes soften slightly.

Combine – Return shrimp to the skillet, drizzle with remaining lemon juice, and toss everything together.

Finish & serve – Garnish with parsley and optionally sprinkle with feta or olives for a Mediterranean touch.
