Mediterranean Stir-Fried Asparagus with Shrimp

Ingredients:

  • 1 lb (450g) shrimp, peeled & deveined

  • 1 bunch asparagus, trimmed & cut into 2-inch pieces

  • 2 tbsp extra-virgin olive oil

  • 3 garlic cloves, minced

  • 1 small red onion, thinly sliced

  • 1 medium red bell pepper, sliced

  • 1 medium zucchini, sliced into half-moons

  • 1 cup cherry tomatoes, halved

  • 1 tsp paprika

  • ½ tsp chili flakes (optional)

  • 1 tsp dried oregano

  • Juice of 1 lemon

  • Salt & black pepper, to taste

  • 2 tbsp fresh parsley, chopped

  • Optional garnish: crumbled feta or olives


Instructions:

  1. Prepare shrimp – Pat shrimp dry, season with a pinch of salt, pepper, paprika, and half the lemon juice.

  2. Cook shrimp – Heat 1 tbsp olive oil in a large skillet/wok over medium-high heat. Add shrimp and stir-fry for 2–3 minutes until pink and just cooked. Remove and set aside.

  3. Stir-fry vegetables – In the same pan, add remaining olive oil. Toss in garlic and onion, sauté until fragrant. Add asparagus, zucchini, and bell pepper. Stir-fry for 3–4 minutes until crisp-tender.

  4. Add tomatoes & seasoning – Stir in cherry tomatoes, oregano, chili flakes, salt, and pepper. Cook for 2 more minutes until tomatoes soften slightly.

  5. Combine – Return shrimp to the skillet, drizzle with remaining lemon juice, and toss everything together.

  6. Finish & serve – Garnish with parsley and optionally sprinkle with feta or olives for a Mediterranean touch.


Serving Suggestions:

  • Serve over couscous, quinoa, or brown rice for a complete meal.

  • Pair with a side of warm pita bread or a Greek salad.
