🔥 Instructions
1. Marinate the Chicken

In a bowl, whisk together all marinade ingredients.
-
Reserve about 1/2 cup of the marinade in a small saucepan (you’ll turn this into glaze later).
-
Pour remaining marinade over the chicken in a zip-top bag or bowl.
-
Marinate in the fridge for at least 2 hours, preferably overnight for max flavor.
2. Grill the Chicken
-
Preheat grill or grill pan over medium-high heat.
-
Remove chicken from marinade and grill for about 5–7 minutes per side, until cooked through and nicely charred.
-
Let rest 5 minutes before slicing.
3. Make the Huli Huli Glaze
-
Bring the reserved marinade to a boil in a small saucepan.
-
Simmer until it thickens into a glaze (about 5–8 minutes). Stir in honey or sugar if desired.
4. Grill Pineapple
-
Grill pineapple slices for 1–2 minutes per side, until caramelized.
5. Build the Chicken Stack
Layer in a bowl or plate:
