🦐 Grilled Garlic Butter & Parsley Prawns

Ingredients:

1 kg (2.2 lbs) large prawns (peeled and deveined, tails on if desired)

4 tbsp unsalted butter (melted)
-
4 cloves garlic (minced)
-
2 tbsp fresh parsley (finely chopped)
-
1 tbsp lemon juice (freshly squeezed)
-
1 tsp lemon zest
-
1 tbsp olive oil
-
Salt & freshly ground black pepper, to taste

Optional: chili flakes or smoked paprika for extra heat/smoke
Instructions:
1. Prepare the Prawns:

If using fresh prawns, peel and devein them. Leave the tails on for presentation if you like.

Pat dry with paper towels to help them grill better.
2. Make the Garlic Butter Marinade:
In a bowl, combine:

Melted butter

Minced garlic
-
Chopped parsley
-
Lemon juice
-
Lemon zest
-
Olive oil
-
Salt and pepper (plus chili flakes or paprika if using)
3. Marinate the Prawns:

Toss the prawns in the garlic butter mixture until well coated.

Cover and let marinate for 15–30 minutes in the fridge (don’t marinate longer or the acid may start to “cook” the prawns).
4. Preheat Grill or Grill Pan:

Medium-high heat.

Lightly oil the grates or grill pan to prevent sticking.
5. Grill the Prawns:

Thread prawns onto skewers (if desired) for easier flipping.

Grill for 2–3 minutes per side, or until pink, opaque, and slightly charred.
6. Serve:

Remove from grill, brush with any remaining garlic butter.

Sprinkle with a bit more fresh parsley and an extra squeeze of lemon.
