Crispy Sweet Potato & Quinoa Patties with Zesty Lemon Avocado Drizzle:


🥔 Crispy Sweet Potato & Quinoa Patties

Ingredients:

  • 1 medium sweet potato (about 1 cup mashed)

  • 1 cup cooked quinoa

  • ½ cup finely chopped red onion

  • 2 cloves garlic, minced

  • ¼ cup chopped fresh parsley or cilantro

  • ¼ cup breadcrumbs (or use oat flour for gluten-free)

  • 1 egg (or flax egg for vegan)

  • ½ tsp cumin

  • ½ tsp smoked paprika

  • Salt and pepper to taste

  • Olive oil for pan-frying

Instructions:

  1. Cook the sweet potato: Peel and cube, then steam or boil until soft. Mash and let cool.

  2. Combine ingredients: In a large bowl, mix mashed sweet potato, cooked quinoa, onion, garlic, herbs, breadcrumbs, egg, and spices. Adjust seasoning.

  3. Form patties: Shape into 6–8 small patties. If mixture is too wet, add more breadcrumbs.

  4. Cook: Heat oil in a non-stick skillet over medium heat. Fry patties 3–4 mins per side until golden and crispy. Place on paper towels to drain excess oil.


🥑 Zesty Lemon Avocado Drizzle

Ingredients:

  • 1 ripe avocado

  • Juice of 1 lemon (or more to taste)

  • 2 tbsp olive oil

  • 1 clove garlic, minced

  • 2 tbsp water (to thin, as needed)

  • Salt and pepper to taste

Instructions:

  1. Add all ingredients to a blender or food processor.

  2. Blend until smooth and creamy. Add more water or lemon juice to reach your desired consistency.

  3. Taste and adjust salt, pepper, or lemon for extra zing.


🌿 To Serve:

  • Drizzle the avocado sauce over warm patties.

  • Serve with a green salad, grilled veggies, or tucked into pita pockets.
