🥗 Ingredients:

  • 2 medium zucchinis, sliced into ¼-inch thick rounds

  • ½ cup grated Parmesan cheese

  • 1 tablespoon olive oil

  • ½ teaspoon garlic powder

  • ½ teaspoon Italian seasoning (optional)

  • Salt and black pepper, to taste

  • Fresh parsley or basil, for garnish (optional)

👩‍🍳 Instructions:

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it.

  2. Prep zucchini:

    • Wash and dry zucchinis. Slice into uniform ¼-inch thick rounds for even cooking.

  3. Season:

    • In a large bowl, toss zucchini rounds with olive oil, garlic powder, Italian seasoning, salt, and pepper until evenly coated.

  4. Coat with Parmesan:

    • Dip or press each round into the Parmesan cheese, coating one side.

    • Arrange the zucchini in a single layer on the prepared baking sheet, cheese-side up.

  5. Bake:

    • Roast for 12–15 minutes, or until the cheese is golden and crispy and zucchini is tender.

  6. Optional – Broil for extra crisp:

    • For a crispier top, broil for 1–2 minutes at the end — watch closely to avoid burning.

  7. Serve:

    • Garnish with chopped parsley or basil. Serve hot as a snack, appetizer, or side.

💡 Tips:

  • Use freshly grated Parmesan for best results—it melts and crisps better than pre-shredded.

  • Great paired with marinara sauce for dipping!

  • Add a sprinkle of red pepper flakes for a spicy kick.
