๐Ÿซ Classic Chocolate Mousse Recipe

๐Ÿงพ Ingredients:

  • 200g (7 oz) dark chocolate (around 60โ€“70% cocoa), chopped

  • 3 large eggs, separated

  • 2 tablespoons granulated sugar

  • 1 cup (240 ml) heavy cream, cold

  • 1 teaspoon vanilla extract

  • A pinch of salt

Optional toppings (like in the photo):

  • Shaved chocolate

  • Fresh raspberries

  • Powdered sugar


๐Ÿฅฃ Instructions:

1. Melt the chocolate

  • In a heatproof bowl, melt the chopped dark chocolate over a double boiler (or in the microwave in 20-second bursts).

  • Let it cool slightly (important so it doesn’t scramble the eggs later).

2. Whip the cream

  • In a chilled bowl, whip the heavy cream with vanilla extract until soft peaks form.

  • Set aside in the fridge.

3. Beat the egg whites

  • In a clean bowl, beat the egg whites with a pinch of salt until they form soft peaks.

  • Gradually add the sugar, then continue beating until stiff peaks form.

4. Add yolks to chocolate

  • Stir the egg yolks into the slightly cooled melted chocolate until smooth.

5. Combine everything

  • Gently fold the whipped cream into the chocolate mixture using a spatula.

  • Then gently fold in the beaten egg whites in 2-3 additions. Be careful not to deflate the mousse.

6. Chill

  • Spoon the mousse into serving jars or cups.

  • Chill for at least 1โ€“2 hours, or until set.

7. Garnish and serve

  • Top with chocolate shavings, fresh raspberries, and a dusting of powdered sugar like in the photo.

  • Want it egg-free? Replace eggs with more whipped cream or use aquafaba (chickpea water) for a vegan version.

  • Use high-quality chocolate for the best flavor.
