Potatoes and Green Beans with Sausage recipe — great for a one-pan dinner. It’s easy to make and packs lots of comforting, savory flavor.


Potatoes and Green Beans with Sausage

Ingredients:

  • 1 lb smoked sausage (kielbasa or andouille), sliced into ½-inch rounds

  • 1.5 lbs baby potatoes, halved or quartered (Yukon Gold or red potatoes work well)

  • 12 oz fresh green beans, trimmed and cut into 2-inch pieces

  • 1 small onion, sliced (optional)

  • 3 cloves garlic, minced

  • 2 tbsp olive oil

  • 1 tsp smoked paprika

  • 1 tsp Italian seasoning

  • ½ tsp salt (or to taste)

  • ½ tsp black pepper

  • ¼ tsp crushed red pepper flakes (optional, for heat)

  • 1 tbsp fresh parsley, chopped (for garnish)


Instructions:

1. Preheat the oven:

Preheat to 400°F (200°C). If you’re making it in a skillet, stovetop instructions are below.


2. Prep the potatoes:

In a large bowl, toss the baby potatoes with 1 tbsp olive oil, half the paprika, salt, and pepper.

Spread them on a baking sheet and roast for 15 minutes, or until they just start to soften.


3. Cook the sausage and veggies:

While potatoes roast:

  • In a large skillet over medium heat, add 1 tbsp olive oil and the sliced sausage.

  • Brown the sausage for 3–4 minutes per side.

  • Add onion and garlic, sauté 2–3 minutes until fragrant.

  • Add green beans, sauté another 2–3 minutes to soften slightly.


4. Combine and finish cooking:

Oven method:

  • After the potatoes have roasted 15 minutes, add the sausage, green beans, and remaining seasonings to the sheet pan.

  • Toss everything together and roast another 15–20 minutes, or until potatoes are golden and green beans are tender.

Skillet method (one-pan):

  • Add the pre-cooked potatoes into the skillet with sausage and green beans.

  • Cover and cook over medium-low heat for 10–15 minutes, stirring occasionally, until potatoes are fork-tender and green beans are cooked through.


5. Serve:

  • Garnish with fresh parsley.

  • Serve warm with crusty bread or a light salad.


Optional Additions:

  • Add a splash of chicken broth or lemon juice for brightness.

  • Top with a bit of Parmesan cheese before serving.
