Potatoes and Green Beans with Sausage recipe — great for a one-pan dinner. It’s easy to make and packs lots of comforting, savory flavor.
Potatoes and Green Beans with Sausage

Ingredients:

1 lb smoked sausage (kielbasa or andouille), sliced into ½-inch rounds

1.5 lbs baby potatoes, halved or quartered (Yukon Gold or red potatoes work well)

12 oz fresh green beans, trimmed and cut into 2-inch pieces

1 small onion, sliced (optional)

3 cloves garlic, minced
-
2 tbsp olive oil
-
1 tsp smoked paprika
-
1 tsp Italian seasoning
-
½ tsp salt (or to taste)

½ tsp black pepper
-
¼ tsp crushed red pepper flakes (optional, for heat)

1 tbsp fresh parsley, chopped (for garnish)
Instructions:
1. Preheat the oven:
Preheat to 400°F (200°C). If you’re making it in a skillet, stovetop instructions are below.
2. Prep the potatoes:
In a large bowl, toss the baby potatoes with 1 tbsp olive oil, half the paprika, salt, and pepper.
Spread them on a baking sheet and roast for 15 minutes, or until they just start to soften.
3. Cook the sausage and veggies:
While potatoes roast:

In a large skillet over medium heat, add 1 tbsp olive oil and the sliced sausage.

Brown the sausage for 3–4 minutes per side.

Add onion and garlic, sauté 2–3 minutes until fragrant.

Add green beans, sauté another 2–3 minutes to soften slightly.
4. Combine and finish cooking:
Oven method:

After the potatoes have roasted 15 minutes, add the sausage, green beans, and remaining seasonings to the sheet pan.

Toss everything together and roast another 15–20 minutes, or until potatoes are golden and green beans are tender.
Skillet method (one-pan):

Add the pre-cooked potatoes into the skillet with sausage and green beans.

Cover and cook over medium-low heat for 10–15 minutes, stirring occasionally, until potatoes are fork-tender and green beans are cooked through.
5. Serve:

Garnish with fresh parsley.

Serve warm with crusty bread or a light salad.
Optional Additions:
