🧾 Ingredients

For the Steak Bites:

  • 1.5 lbs (680g) sirloin steak (or ribeye, NY strip), cut into 1-inch cubes

  • Salt and freshly ground black pepper, to taste

  • 1 tbsp olive oil

  • 3 tbsp unsalted butter

  • 5 cloves garlic, minced

  • 1 tbsp fresh parsley, chopped (for garnish)

  • Optional: red pepper flakes, to taste

For the Roasted Veggies:

  • 1 large zucchini, chopped

  • 1 red bell pepper, chopped

  • 1 yellow bell pepper, chopped

  • 1 red onion, chopped

  • 1 cup broccoli florets

  • 2 tbsp olive oil

  • 1 tsp garlic powder

  • 1 tsp Italian seasoning

  • Salt and pepper, to taste


🍳 Instructions

1. Prep the Veggies

  • Preheat your oven to 425°F (220°C).

  • Toss chopped veggies with olive oil, garlic powder, Italian seasoning, salt, and pepper.

  • Spread them in a single layer on a baking sheet.

  • Roast in the oven for 20–25 minutes, stirring halfway, until tender and slightly charred.

2. Cook the Steak Bites

  • While veggies roast, season steak bites generously with salt and pepper.

  • Heat 1 tbsp olive oil in a large skillet over medium-high heat.

  • Add steak in a single layer (do in batches if needed). Sear 1-2 minutes per side until browned. Don’t overcook.

  • Remove steak and set aside on a plate.

3. Make Garlic Butter Sauce

  • Reduce heat to medium. In the same skillet, add butter.

  • Once melted, stir in minced garlic. Cook for 1–2 minutes until fragrant.

  • Return steak bites to the skillet. Toss to coat in the garlic butter sauce for 1 minute.

  • Optional: Sprinkle with red pepper flakes and fresh parsley.

4. Serve

  • Plate the steak bites with a serving of roasted veggies on the side.

  • Spoon extra garlic butter sauce over everything.

  • Serve with crusty bread, mashed potatoes, or cauliflower rice if desired.
