🍫 Chocolate Nut Clusters

Ingredients:

  • 2 cups mixed nuts (e.g. almonds, cashews, peanuts, pecans, or walnuts) – roasted & unsalted

  • 12 oz (about 2 cups) semi-sweet or dark chocolate chips (or chopped chocolate)

  • 1 tsp vanilla extract (optional)

  • Pinch of sea salt (optional, for garnish)


Instructions:

  1. Melt the chocolate:

    • Microwave: Place chocolate in a microwave-safe bowl. Heat in 30-second intervals, stirring between each, until fully melted and smooth.

    • Stovetop: Use a double boiler or place a heatproof bowl over simmering water, stirring until melted.

  2. Combine:

    • Stir the nuts into the melted chocolate until they’re well coated.

    • Add vanilla extract if using.

  3. Form clusters:

    • Drop spoonfuls of the mixture onto a parchment-lined baking sheet.

    • Sprinkle a tiny pinch of sea salt on each cluster (optional).

  4. Set:

    • Let clusters cool at room temperature until firm, or refrigerate for faster setting (about 20–30 minutes).

  5. Serve or store:

    • Store in an airtight container at room temperature for up to 1 week, or refrigerate for up to 2 weeks.


Tips:

  • For added crunch, mix in some puffed rice or crushed pretzels.

  • For a festive touch, drizzle with white chocolate after setting.

  • Make them bite-sized or large — it’s up to you!
