๐Ÿงพ Ingredients:

  • 1 cup dry brown or green lentils, rinsed

  • 1 small onion, diced

  • 2 carrots, diced

  • 2 celery stalks, diced

  • 2 garlic cloves, minced

  • 1 (14.5 oz) can diced tomatoes (no salt added)

  • 4 cups low-sodium vegetable broth (or water + bouillon)

  • 1 tsp olive oil or cooking spray

  • 1 tsp cumin

  • ยฝ tsp smoked paprika

  • ยฝ tsp dried thyme or Italian seasoning

  • Salt and pepper to taste

  • Optional: handful of chopped spinach or kale (added at the end)


๐Ÿ‘ฉโ€๐Ÿณ Instructions:

1. Sautรฉ the Vegetables

  • In a large pot, heat the olive oil (or spray) over medium heat.

  • Add the diced onions, carrots, and celery. Cook for 5โ€“6 minutes until softened.

  • Stir in garlic, cumin, paprika, thyme, salt, and pepper. Cook another 1โ€“2 minutes until fragrant.

2. Add Lentils & Simmer

  • Add lentils, diced tomatoes, and broth. Stir well.

  • Bring to a boil, then reduce heat to low and cover.

  • Simmer for 25โ€“30 minutes, or until lentils are tender.

3. Add Greens (Optional)

  • Stir in spinach or kale if using, and cook for 2โ€“3 more minutes until wilted.

4. Adjust & Serve

  • Taste and adjust seasoning. Add extra broth if you like it soupier.

  • Serve hot with a sprinkle of herbs or a squeeze of lemon juice for brightness.
