Crispy on the outside, soft on the inside — these veggie-packed cups are perfect as a snack, appetizer, or kid-friendly side dish!
Ingredients:

2 cups mashed potatoes (leftover or freshly made)

1 cup steamed broccoli, finely chopped

1/2 cup shredded cheddar cheese

1 egg

1/4 cup grated Parmesan cheese

Salt & pepper to taste

Optional: garlic powder, onion powder (1/2 tsp each)

Olive oil spray or melted butter (for brushing the pan)
Instructions:
1️⃣ Preheat oven to 400°F (200°C).
Lightly grease or spray a muffin tin with olive oil or melted butter.
2️⃣ Mix the filling:
In a large bowl, combine mashed potatoes, chopped broccoli, cheddar, Parmesan, egg, and seasonings. Mix until fully combined.
3️⃣ Scoop & shape:
Spoon the mixture into the muffin tin and press down gently to form a cup shape. You can create a slight indent in the center if desired.
4️⃣ Bake:
Bake for 20–25 minutes, or until golden brown on top and firm to the touch. Let cool slightly before removing from the tin.
