Zesty Chicken & Veggie Skillet 🌈
A vibrant, healthy one-pan dinner with juicy chicken, fresh veggies, and a bright lemon-soy drizzle. Done in just 30 minutes!
Ingredients
For the Chicken:
1 lb chicken breast, cut into bite-sized pieces
2 tbsp olive oil
1 tsp garlic powder
1 tsp onion powder
1 tsp paprika
Salt and pepper to taste
For the Veggies:
1 cup broccoli florets
1 cup bell peppers, sliced (use red, yellow, or both)
1 cup cherry tomatoes, halved
For the Sauce:
1 tbsp soy sauce (or coconut aminos for gluten-free)
1 tbsp fresh lemon juice
Instructions
Step 1: Marinate the Chicken
In a large bowl, add chicken pieces, olive oil, garlic powder, onion powder, paprika, salt, and pepper. Toss to coat well. Let it marinate for at least 15 minutes (or up to 1 hour for extra flavor).
Step 2: Cook the Chicken
Heat a large skillet over medium heat.
Add marinated chicken and cook for about 5–7 minutes, flipping as needed, until golden brown and cooked through.
Remove from the skillet and set aside.
Step 3: Sauté the Vegetables
In the same skillet, add a small splash of olive oil if needed.
Add broccoli florets and bell peppers. Cook for 3–4 minutes until starting to soften.
Add cherry tomatoes and sauté another 1–2 minutes until tomatoes begin to blister and veggies are tender-crisp.
Step 4: Combine & Finish
Return the cooked chicken to the skillet.
Drizzle in the soy sauce and lemon juice. Stir everything together and cook for another 1–2 minutes to heat through and coat everything in that zesty sauce.
