-
2 tbsp olive oil
-
½ tsp garlic powder
-
½ tsp smoked paprika

Optional: a sprinkle of grated parmesan or fresh herbs
Instructions:
1. Make the Fries:
-
Preheat oven to 425°F (220°C).
-
Toss the cut potatoes with olive oil, garlic powder, paprika, salt, and pepper.
-
Spread evenly on a baking sheet in a single layer.
-
Bake for 25–30 minutes, flipping halfway through, until golden and crispy.
-
Optional: Broil for an extra 2–3 minutes at the end for max crispiness.
2. Grill the Fish:
-
While fries are baking, preheat a grill or grill pan over medium-high heat.
-
Pat the fish fillets dry with paper towels.
-
Brush with olive oil or butter, then season with garlic, lemon juice, salt, pepper, and paprika.
-
Grill for 3–4 minutes per side (depending on thickness) until fish is opaque and flakes easily with a fork.
3. Serve:
-
Plate the grilled fish with crispy fries on the side.
-
Garnish with fresh herbs and serve with lemon wedges.
-
Optional sides: tartar sauce, garlic yogurt dip, or a light salad.
🔥 Quick Tips:
-
Soak cut fries in cold water for 30 minutes before baking for extra crispiness.
-
Use an air fryer for the fries if you want them even crispier with less oil.
-
Want to add some spice? A dash of cayenne or hot sauce on the fish goes a long way!
