3.5 tbsp (50 g) butter

A bunch of fresh dill, finely chopped

Salt, smoked paprika, black pepper, oregano – to taste

For the Filling:

1.1 lbs (500 g) ground beef

1 onion, finely chopped

2 garlic cloves, minced

1 red bell pepper, diced

1 large tomato, chopped

2.5 oz (70 g) tomato paste

A bunch of fresh parsley, chopped

3.5 oz (100 g) mozzarella cheese, shredded

For the Garlic Herb Yogurt Dressing:

½ cup plain Greek yogurt

1 tbsp olive oil

1 garlic clove, grated

1 tbsp lemon juice

1 tbsp chopped fresh parsley or dill

Salt to taste

Instructions:

1. Make the Mashed Potato Nests:

Peel and chop the potatoes. Boil in salted water until tender (about 15–20 minutes).

Drain and mash with butter, chopped dill, salt, smoked paprika, black pepper, and oregano.

Let cool slightly, then form into small nests on a parchment-lined baking tray using your hands or a spoon.

2. Prepare the Filling:

In a skillet over medium heat, sauté chopped onion and minced garlic in a little oil until translucent.

Add ground beef and cook until browned.

Stir in diced red bell pepper, chopped tomato, and tomato paste. Cook for 5–7 minutes until the mixture thickens.

Season with salt, pepper, and a bit of oregano. Stir in chopped parsley and remove from heat.

3. Assemble and Bake:

Spoon the beef mixture into the potato nests.

Top each with a bit of shredded mozzarella cheese.

Bake at 375°F (190°C) for 15–20 minutes until cheese is melted and bubbly.

4. Make the Garlic Herb Yogurt Dressing:

In a bowl, whisk together yogurt, olive oil, grated garlic, lemon juice, herbs, and salt until smooth.

5. Serve:

Serve the warm stuffed potato nests with a drizzle of garlic herb yogurt dressing and extra fresh parsley on top.

Tips:

For a richer flavor, try adding sour cream or cream cheese to the mashed potatoes.

You can substitute ground beef with ground turkey or chicken for a lighter option.

Add some chili flakes to the filling for a spicy kick!
