🥣 1-Point WW Lentil Soup

🧾 Ingredients:

1 cup dry brown or green lentils, rinsed

1 small onion, diced
-
2 carrots, diced
-
2 celery stalks, diced
-
2 garlic cloves, minced
-
1 (14.5 oz) can diced tomatoes (no salt added)
-
4 cups low-sodium vegetable broth (or water + bouillon)

1 tsp olive oil or cooking spray
-
1 tsp cumin
-
½ tsp smoked paprika
-
½ tsp dried thyme or Italian seasoning
-
Salt and pepper to taste

Optional: handful of chopped spinach or kale (added at the end)
👩🍳 Instructions:
1. Sauté the Vegetables

In a large pot, heat the olive oil (or spray) over medium heat.

Add the diced onions, carrots, and celery. Cook for 5–6 minutes until softened.

Stir in garlic, cumin, paprika, thyme, salt, and pepper. Cook another 1–2 minutes until fragrant.
2. Add Lentils & Simmer

Add lentils, diced tomatoes, and broth. Stir well.

Bring to a boil, then reduce heat to low and cover.

Simmer for 25–30 minutes, or until lentils are tender.
3. Add Greens (Optional)

Stir in spinach or kale if using, and cook for 2–3 more minutes until wilted.
4. Adjust & Serve

Taste and adjust seasoning. Add extra broth if you like it soupier.

Serve hot with a sprinkle of herbs or a squeeze of lemon juice for brightness.
