Ingredients

  • 1 cup (2 sticks) unsalted butter, softened

  • 1 cup brown sugar, packed

  • ½ cup granulated sugar

  • 2 large eggs

  • 2 tsp vanilla extract

  • 2 cups all-purpose flour

  • 1 tsp baking soda

  • ½ tsp baking powder

  • ½ tsp salt

  • 1 tsp ground cinnamon (optional, but delicious)

  • 2 cups old-fashioned oats

  • 1½ cups semi-sweet chocolate chips

  • 1 cup chopped pecans or walnuts

  • 1 cup sweetened shredded coconut (optional but traditional)

1️⃣ Preheat Oven
Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.

2️⃣ Cream the Butter & Sugars
In a large bowl, beat together butter, brown sugar, and granulated sugar until light and fluffy (about 2–3 minutes).

3️⃣ Add Eggs & Vanilla
Beat in eggs one at a time, then add vanilla extract. Mix until smooth.

4️⃣ Mix Dry Ingredients
In a separate bowl, whisk together flour, baking soda, baking powder, salt, and cinnamon.

5️⃣ Combine Wet & Dry
Gradually add the dry mixture to the wet ingredients until just combined.

6️⃣ Fold in the Good Stuff
Stir in oats, chocolate chips, nuts, and coconut (if using).

7️⃣ Scoop & Bake
Drop by rounded tablespoons (or use a cookie scoop) onto baking sheets about 2 inches apart.
Bake for 10–12 minutes, until edges are golden brown but centers are still soft.

8️⃣ Cool & Enjoy
Let cookies cool on the pan for 5 minutes before transferring to a rack to cool completely.
