Ingredients
6 oz corn chips
2 lbs lean ground beef
2 eggs, large
1 1/2 cups corn and black bean salsa (or chunky salsa)
1 oz taco seasoning
1 tsp salt
1 tsp pepper
1 tsp garlic powder
2 cups shredded Mexican cheese blend
Instructions
Preheat oven to 350F.
Pour the corn chips into a large Ziploc bag and crush them with a rolling pin.
Dump the ground beef into a large mixing bowl.
Add the eggs and crushed corn chips to the bowl.
Add 1/2 cup of the salsa to the bowl.
Add the taco seasoning, salt, pepper and garlic powder to the bowl.
Use your hands to combine all of the ingredients well.
Add 1 cup of the shredded cheese to the bowl.
Mix the cheese into the meat mixture.
Line a 9 x 5 inch loaf pan with aluminum foil and spray it with cooking spray.
Press the meat mixture into the loaf pan.
Spoon the remaining 1 cup of salsa on top of the meat mixture and spread it out evenly.
Place the loaf pan in the oven and bake the meatloaf for 40 minutes.
After 40 minutes remove the pan from the oven and sprinkle the remaining 1 cup of shredded cheese on top of the meatloaf.
Return the pan to the oven and continue baking the meatloaf for 10 – 15 minutes or until it reaches an internal temperature of 160F.
Remove the meatloaf from the oven and allow it to rest for 5 minutes.
Use the foil to lift the meatloaf from the pan.
Slice and serve.
