Ingredients

1 lg egg

8 oz tomato sauce

1/2 Tbsp garlic powder

1 tsp salt

1/2 tsp black pepper

4 slice American cheese, cut into small pieces

1/2 md onion, chopped

1/2 md bell pepper, chopped

1/2 sleeve Ritz crackers, crushed (do not substitute)

1 1/2 lb lean ground beef, grass-fed preferred

1/2 c ketchup

1/4 c brown sugar

1 tsp yellow mustard

Directions

1. Preheat oven to 350 degrees F. Beat egg. Blend in the tomato sauce, garlic powder, salt, and pepper.

2. Add diced cheese.

3. Add chopped onion, bell pepper, and crackers.

4. Mix in ground beef. Thoroughly squish ingredients with your hands (yes, it is messy). If you don’t want to get your hands messy it can be put in a food processor and mix.

5. Spread in a 1 1/2 quart baking dish. Bake in the preheated oven covered for 1 hour.

6. Mix the ketchup, brown sugar, and yellow mustard for the glaze.

7. Remove the meatloaf from the oven. Use paper towels to drain off the fat.

8. Poke holes in the top.

9. Pour the glaze on top. Return to oven and bake uncovered for another 30 minutes.
